Ingredients:
6 Eggs
¼ Cup Basil
1 Box Almond Truffle Cheese, crumbled
2 Cups Shiitake or any mushrooms, sliced thin
½ Cup Turkey Sausage, chopped
1 Cup Spinach
2 Tablespoons Coconut liquid aminos
¼ Teaspoon Garlic powder
Salt and pepper, to taste
Directions:
Pre-heat oven to 400.
Whisk eggs in a large bowl. Add torn pieces of basil and crumble cheese into mixture. Set aside.
Slice mushrooms and cut sausage into small cubes.
Heat a pan with oil and cook the spinach, mushrooms and sausage for 6-8 minutes or until sausage is golden brown. Add coconut liquid aminos half way through cooking. Once cooked, turn off flame and set a side.
Grease a small casserole dish with coconut oil spray. Add the spinach, mushrooms and sausage mixture on the bottom of the dish. Sprinkle with garlic powder. Add the eggs to the casserole dish and season with salt and pepper.
Place in oven and cook for 20 minutes or until eggs are firm.
