Yields: 4 servings
8 - parsnips, sliced into fries
1 tablespoon - olive oil (melted coconut oil works well, too)
salt (Garlic salt rocks)
Pre-heat oven to 425. Line a cookie sheet with parchment paper and spray with oil.
Slice parsnips into fries. Toss with oil and season with salt (I love Trader Joe's Garlic Salt) and paprika.
Place parsnips on the cookie sheet. Place in oven for 20-30 minutes or until golden. Dip into Spicy Tomato Jam (see recipe) or unsweetened ketchup.
