Yields: 6-8 servings
Ingredients:
Noodles
4 zucchini or 4 cups pre-made zucchini noodles aka zoodles
or
1 box gluten free pasta
coconut oil or grape seed oil and salt for pasta water
Bolognese Sauce:
1 pound - organic, grass-fed ground meat
2 tablespoons - coconut oil
2 tablespoons - fresh garlic or 1 tablespoon garlic powder to taste
1 - onion, chopped
½ cup - red bell pepper, chopped
2 cups - tomatoes, diced
1 tablespoon - basil, chopped
1 teaspoon - dried oregano
salt and pepper to taste
chili flakes, optional
dairy free, soy cheese (So Delicious Coconut Mozzarella is recommended)
Directions:
Noodles:
Either make zoodles with zucchinis or make pasta according to box. If you bought pre-made zucchini noodles, set them aside.
To make the Bolognese:
In a large saucepan, heat coconut oil. Add garlic, onions and bell peppers. Cook for 5 minutes on a medium heat.
Add ground meat and cook until brown for about 10 minutes. Stir every 2-3 minutes so sauce does not stick to the pan.
Add fresh tomatoes, chopped basil and oregano. Mix and add the salt, pepper and chili to taste. Simmer for 30 minutes on a medium to low heat. Add sauce to pasta and ENJOY.
Feel free to sprinkle a little dairy free, soy free cheese on top, like So Delicious Coconut Mozzarella.
