Cook time: 30-40 minutes
Yields: 4 servings
Ingredients:
12 - carrots
2 tablespoons - olive oil or coconut oil (melted)
2 tablespoons - cumin
1 tablespoon - turmeric
4 tablespoons - coconut aminos
salt and pepper, to taste
Directions:
Pre-heat oven to 425. Line a sheet plan with parchment paper and spray with oil
Quarter carrots length wise. Place in a bowl. Toss with oil, cumin, turmeric, coconut aminos and salt and pepper.
Place carrots on sheet pan in 1 layer. If all the carrots do not fit in 1 layer, use a second sheet pan.
Place in oven and bake for 30-40 minutes or until soft and crispy on the ends.
Remove from oven and taste for salt and pepper.
