Serves: 6-8
Ingredients:
2 cups - old-fashioned oats 3 tablespoons - unsweetened applesauce 1 tablespoon - honey plus 2 squirts stevia 2 tablespoons - cinnamon 2 teaspoons - vanilla extract ½ tablespoon - coconut oil ¼ cup - chopped walnuts ¼ cup - chopped almonds ¼ cup - chopped dried apple rings ¼ cup - raisins
Directions:
Preheat the oven to 325 degrees. Line a cookie sheet with parchment paper or coat with non-stick spray.
In a medium bowl, thoroughly whisk the applesauce, honey, stevia, cinnamon, vanilla and oil.
Add the oats to the wet mixture and mix evenly. Spread the mixture on the cookie sheets and bake for approximately 15-20 minutes.
Remove from the oven. Add the walnuts and almonds. Bake for an additional 10-15 minutes or until the granola is golden brown and crunchy. Make sure to pay close attention to the nuts because they will burn if they are left in the oven for too long.
Remove from the oven and toss in the chopped apple rings and raisins. Once the granola is 100% cool, store in an airtight container.
Feel free to enjoy protein rich milk (Almond or soy milk are great substitutes) or non-fat plain yogurt. Add some antioxidant filled berries for a complete treat!
