Here you go. The EASIEST recipe for Chocolate Covered Matzo.
Did I mention it is basically sugar free because I used Lily's sugar free chocolate and Coconut Sugar with is low glycemic and will not spike your insuline like regular sugar, honey, agave or maple.
This recipe is also 100% Dairy Free AND 100% Gluten Free.
Even my dad likes it...
Dad opens the fridge, "What did you make Lolo?"
"Chocolate Covered Matzo." (I didn't tell him it was sugar, gluten and dairy free.)
"This is good."
"Thanks, Dad. (Pause) It's gluten, dairy and sugar free."
" Hmm....Well...Who doesn't like chocolate?!?" As he proceeds to eat some more.

Chocolate Covered Matzo
8 Sheets Gluten Free Matzo
1/2 Bag Lily's Chocolate Chips
1/4 Cup Coconut Oil
Toasted Nuts, rough chopped
Lay Matzo flat on a cookie sheet and sprinkle with coconut sugar.
Melt the chocolate chips and coconut oil in a double boiler. Once the chocolate chips have melted, spread evenly over each piece of Matzo. Sprinkle with pink salt and toasted nuts.
Place in the fridge for 15 minutes or until chocolate is hard.
Place on a platter and serve.
